Hold up. Is that oatmeal and spinach? Why yes it is. Don’t knock it until you try it!

This SIMPLE and QUICK meal was inspired by our good buddy, Meg, Owner of Bounty Kitchen in Seattle. This is one of our FAV places to dine or order from UBER eats.

Bounty Kitchen is a modern neighborhood café dedicated to quality food in flavor and harvest. They are committed to improving the way that people eat with a chef-driven menu and a focus on healthy eating. They produce all of their food in house using organic produce and ingredients with the highest quality standards. They specialize in imaginative salads and healthy bowls with layers of texture from old fashioned cooking techniques like pickling, fermenting, roasting, and grilling as well as raw and flavors borrowed from ancient cultures and modern blends! They love veggies and delight in elevating them in sense and taste.

Ok back to the recipe….

  • Cook up your favorite oats and add 1 TBS of coconut oil or Peanut Butter and mix together*

  • Chop up spinach and place in the bottom of the bowl

  • Top oats over spinach and manger!

  • For added protein, you can add a couple of tablespoons of your favorite vanilla protein powder to the oats OR 2 poached/scrambled eggs on the side!

*We use steel cut oats or Nature’s Path Qia Oatmeal
